For Vanilla Syrup:
Stir sugar and split open vanilla bean into the boiling water. Allow to cool, and give a good shake to break up vanilla.
For Cocktail:
Add lemon and vanilla syrup to wine glass, top with grapefruit soda, and give a gentle stir. Garnish with fresh grapefruit on the rim.

½ oz Raspberry puree (or pureed semi defrosted frozen raspberries)
½ oz simple syrup
¾ oz fresh lemon juice

Add all ingredients to a shaker; shake well over ice. Strain over fresh ice in a collins glass, and top with club soda.
Simple Syrup: dissolve 2 cups of sugar into 1 cup of boiling water. Let cool.

Combine all ingredients, except wine and cherry puree, in a Boston shaker. Spoon puree in to the bottom of the glass. Add ice to shaker and shake vigorously. Strain carefully over cherry puree so as not to disturb, floating on top of puree. Top with sparkling wine, making drink change from green to red.
